Great video. It is not whether a piece is easy or difficult. It is how well the player translates the message of the composer to the audience. Easier pieces allow one to focus upon the only goal of playing the guitar- to make music. Trying to play difficult pieces to my mind is much like "trying to keep up with the Jones."
Sor op. 60. By the way, did you mention that a very good reason to play « easier » pieces is to improve the tone, I mean, RH string attack? The LH is not an issue, so your attention can focus entirely on tone production.
Some the jewels in the guitar repertoire are early pieces: Largima, Brower Etudes, Romanza ... Sor #2, to name a few. I play these (an other) pieces all the time.

I wish I could play the “easy” pieces LoL
