You have to keep her affectionate meter at the highest mark. If you got her for the first date then that means she’s the highest in the affection meter score so keep it up. Say the right things to her, do her side quests, that will keep her score high. I would advise saving before going to the saucer in Chapter 12 then waiting for the reveal. If it’s not her then do a few of her side quests (you can look up which ones they are without spoilers).
No you can change who you get if you want depending on your relationship meter with everyone or you might get Aerith again it just depends on who has the highest relationship with cloud
