That grilled crocodile tenderloin steak looks absolutely delicious. I would prefer to eat it without the sauce in order to really taste the natural flavour and texture of the meat. I would then try it with the sauce and compare the experience of each. It’s incredible how crocodile tenderloin looks so much like pork tenderloin. I’ve eaten crocodile tail before. It was cut into bite size nuggets then rolled in seasoned breadcrumbs and deep fried. It reminded me of pork.
We tried croc one time at Clark's Fish Camp. They had exotics like boa constrictor, croc, emu, ostrich. If I recall the croc was greasy and oily and chewy. It was the only meat we didn't finish. That sauce though looked amazing. ginger/garlic/carrot/tomato... yum!
