    Thank you so much for your great tutorials! your techniques are superb! I have no idea what Turbinado sugar is, neither can I find any around me but we do have Muscovado sugar which is actually unrefined cane sugar. Can I use it instead?

      Hi, as long as it's a large-sized pan, anything should be fine! But I personally used a cast iron skillet in this video!

      The cheapest drinking grade pure rice (junmai) sake you can find would be the best! I personally don't use cooking sake as they are salted.
