Couldn't agree with you more when you say sharpening is a relaxing activity. Surprisingly few people have the interest of sharpening by hand anymore. I think it's something we learned from our fathers, at least I did. There was no Lansky, belt sharpeners etc.. In those days it was an oil stone, I have since evolved into the Japanese water stone, nothing like them and it's just water.

I agree. Growing up we had a Norton crystolon and a soft Arkansas. Freehand. Lol
