    Ingredients:
    600 g (4 1/2 cups) all-purpose flour (with a protein content of at least 11%)
    470 ml (2 cups) warm water
    4 g (1 1/2 teaspoons) active dry yeast or 10 grams fresh yeast
    25 g (2 tablespoons) olive oil
    10 grams (1 teaspoon) salt
    Toppings:
    Cherry tomatoes
    Flaky sea salt
    Pesto
    Rosemary
    Caramelized onions (optional)
    Instructions:
    In a large bowl, combine the flour, water, yeast, olive oil, and salt. Mix until a sticky dough forms.
    Cover the bowl and let it rest at room temperature for 30 minutes. This step allows the flour to hydrate and the gluten to relax.
    After 30 minutes, lightly wet your hands and begin to fold the dough. Grab one edge of the dough and stretch it gently towards the center of the bowl. Do 2-3 sets of folds at 15-minute intervals, covering the bowl between sets.
    After the last set of folds, cover the bowl with plastic wrap and place it in the refrigerator for at least 8-10 hours, ideally overnight. The cooler temperature will slow down fermentation but allow complex flavors to develop.
    The next day or after 8-10 hours of chilling, remove it from the refrigerator and let it come to room temperature for 30 minutes. Grease a baking sheet with olive oil. Transfer the dough to the pan and spread it out gently with your fingers. Cover the pan and let the dough rise again for 1-2 hours at room temperature.
    Preheat the oven to 220°C (425°F). Drizzle with olive oil, use your fingers to press indentations into the surface of the dough. Add cherry tomatoes or any toppings you like. Bake the focaccia for 20-25 minutes, or until golden brown.
    Remove the focaccia from the oven and let it cool on a wire rack before slicing and serving.
    Tips:
    If you don't have high-protein flour, you can use all-purpose flour.
    Prepared in advance, this focaccia is perfect for serving the next day at a holiday meal.
