There're lots of trails in the Austin area. You can find most of them on my channel. If you're looking for longer trails, the Goodwater loop around lake Georgetown is about 28 miles and is an IMBA EPIC. The South Austin Trail Network (SATN) has more than 60 miles of singletracks. Anyway, Trailforks is your best friend to find trails around Austin.
I tried Walnut Creek Park with my bike this past Sunday. Total disappointment with walkers and off-leach dogs (allowed) all over the mountain bike trails. Very poor signage as well.
Kinda, compared to other trails in central Texas Walnut Creek is one of the most flowy places but there could still be rocky and rooty sections. Also since I've ridden these trails over 100 times I really know the line and flow.
There are lots of main and side trails in the park and they are not organized as a main loop. However, there are trail markers everywhere and I suggest you to use Trailforks or MTB project to help you navigate for the first time.
Used to do this every weekend since I lived right behind there. Fun. We even did night’s rides.

Very dry and lots of dog walking goes on there. Call out on blind turns.
So much damage from the ice storm, freeze last winter as well
