This is one fun fight. Tons of dodging happening, and there's nothing awfully broken about it, if you can believe that. Well, she DOES have a lot of Iron Stance, but what boss DOESN'T in this game? (Lloyd, if you were curious.)
Use the classic strategy of "wait for character's spell animation to end, then strike like a cobra" and she should go down expediently. Jump over her melee attacks and make sure to run up and smack her if she uses her spinning attack. It's easily punishable.
Dodging her spells is also simple. Just jump over Aqua Spiral, walk out of Air Thrust, and walk up or down with Free Run to dodge Burn Strike. Aqua Spiral provides an excellent opportunity to punish Kanonno since it puts you right in front of her, provided you jump over it. You'll want to keep an eye out for that, as well as the aforementioned spinning attack, since dodging Burn Strike doesn't get you closer to her and Air Thrust's spell animation lasts longer, which threw me off a few times, letting Kanonno slip away without staggering.
Interrupting her long arte that starts off with a knee attack that looks like Beast with a Pow Hammer is also a good idea, although make sure to use the actual Pow Hammer spell, and not Pow Pow Hammer, as it has a chance to stun her, but then knock her back into her senses again like in this take.
When all is said and done, Kanonno isn't too troublesome. I wish the next boss shared that trait.

She was an alright heroine, all things considered.
Though she shouldnt be playing with swords, it looks so odd on her.
