I was there in May and stopped at a coffee truck stand. The coffee was out of this world and I am Moroccan and have tasted coffee locally and internationally. Moroccans do not mess with quality when it comes to serving coffee.

For the worse coffee you went to a snack shop, what would you expect 😊. For sure it will be some Nescafé powder and hot water. They will have no coffee machine or fresh beans It’s like going to the takeaway chicken peri peri asking for a coffee 😊

About a café, perhaps it was made with Turkish method which is consumed inside North Africa countries. We put ground café in boyled watter up to boyling point and we serve the mixture with a stainer.
If you want the best coffee with milk ask for Nos-Nos, which means half-half, this is the one we always drink, give you both taste of creamy. Milk and coffee blended together. Cappuccino is originally meant to be milky

All coffee shops in Morocco serve water with coffee drink, 20 years ago we used to get a glass of water with the drink coming from the coffee shop tap water, in uk they still do same until today, they pour water tap into a jug which you can serve your self. during last 8-10 years in Morocco companies that sell water made an offer to the coffee shops to use their small bottles instead of using a glass with tap water, some coffee shops started then the rest followed

How come you didn't visit the one specialist coffee shop in marrakech? they have coffees from alla around the world, Cuba, Brazil, Argentina, Africa, Asia ... all kind of coffees, starting from 4$ up to 200$ a cup
morocco does not have the same coffee culture as in europe or the US. Locals probably don't know what an americano is or how to make a proper Cappuccino. I grew up thinking that cappuccino is just latte with cacao powder, that's why you were always disappointed with that one. Note you didn't go to the real local ones. And Espresso, aka Italian, is the most known variation in morocco besides 50/50, which is basically 50% espresso and 50% Milk. Also the coffeeshops in the roads are known to be the best in espresso. And it's always fresh, and don't make fun of his business, you dont know what he's been through ;)
As a Moroccan girl i could tell y'all that coffe u order from street cars are the greatest because they care more abt the quality and how it would taste unlike the shops but this doesn't mean there isn't cool ones
