I've been making remakes (or MIDI mockups) of orchestral music for many years. It's just like expanding your music vocab.

I just used the stock piano from FL Studio (specifically the 'Close Grand') and BBCSO Discover (from Spitfire Audio) for other orchestral sounds. Then for mixing, I just used stock EQ and limiter plugins from FL Studio as well.

Nope, Mozart wrote a waltz in 4/4 but it was really weird, a dotted half note with two eight notes in a triplet, then 3 eight notes in a triplet fills a bar of 4/4

those are called volume/dynamics automation. I did that just to add realism to its sound
