The thing in apples is "ethylene", if you wish to search for it. This is the thing I have found: "Apples produce a gas called ethylene on ripening. People are often shocked to hear this as it does sound somewhat mysterious and unappetizing but have no fear; ethylene is a natural plant hormone that sets off the ripening process."

I put them in the garage away from sunlight in the heat and it takes maybe 3 days to ripen
Apple has a high volume of ethylene (a hydrocarbon). It's a natural plant hormone good for quicker ripening of fruits. For a faster effect, wrapped in a polythene (nylon/plastic bags) will even double the ripening time because the plastic bags are made from polyethylene.

It makes sense, I believe the apples released a specific gas around one another which ripens other apples and catalyzes the effect in bananas as well so I think you're on to something I love the idea and I'm going to try it myself

Quick question for you. I am a really great cook with American food but I have never eaten Plaintains in my life until now as I am transitioning to becoming an Alkaline Vegan following Dr. Sebi's Afro Bio Mineral Nutritional Guide. One of the things I am trying to replace in an alkaline way is Hashbrowns. Dr. Sebi uses Plaintains for this. I want my Plaintains VERY VERY VERY ripe and soft. Almost mushy like in their texture. I have had my Plaintains in a bag for two weeks. They are black on the outside but still hard in the middle and frying them doesn't soften them enough and they may have gone moldy on the inside. I am not 100% sure. But I took a picture to show someone who may know. Anyone out there who can help. Maybe let me email you the picture so you can tell me if they are bad and also suggest how I can get them mushy?

Plantains ripen better during the warm seasons. That’s why summer is the best time of the year for it. What you can do to get them ripe and soft is follow the tip in this video. Put them in a grocery bag and throw in 2-4 not so fresh apples- they’ll begin to ripen from the third day and the more days you give them, the softer and mushier they become.
Be sure to start with fresh green plantains, not weather beaten ones or ones that have already developed tough skin underneath the green one. I really hope this helps you. You can send me the pictures on Instagram @theafrofooddiary

They rippen after 4 days on the average for me
So if yours has taken 10 days like you said, then it's either the plantains already are weather-beaten and shrunken or you kept them in a cold place.
I know it's winter, so keep them in the warmest place in your house like I did
And start off with fresh healthy green and mature plantains... Hope this helps😊

Thank you for this way to ripen plantains! My sister-in-law is from Venezuela and she made plantains for dessert with a little powdered sugar. I also made a Cuban recipe that I got back in 1976, it had plantains, onions, potatoes. Chilies & pork - I lost it😢 Do you know of a recipe that would have these (and more) ingredients? A must try for me. I do tie mine with black nylon. But this last one I tied for almost 2 weeks is still not ripened upon the weather is not that cold again. Sis are you in Oslo or Bergen
