Driving in VN is about practice. The more you do it, the better you're gonna get. The "dash cam" footage makes it scarier than it is 👍

the view from the cam makes everything smaller, closer than what it actually is, so don't be afraid of driving in VN

The puffy pastry is called Pate-Chaud, a Vietnamese food with a French name. It should be crunchy outside and soft inside, best when hot and bought at the bakeries in Vietnam. The Greeks have something very similar but only with sweet jam inside. The soft dough is similar to Hawaiian dough though the Vietnamese ones are slightly more flavorful. They are definitely great with black coffee. Just reminiscence of the European and old time American customs of drinking coffee, tea with cookies, dough, or pastries for breakfast or break time snacks.

It’s called pate chaud which means warm in French)
For the sticky rice, my favorite place is Xôi Làng nghề in Bình Thạnh. They sell proper northern style xôi with a variety of traditional northern toppings they are all good. The caramelised pork is so soft and melty, sausages flavorful etc. The rice itself is more on a dry and chewy side. I would suggest you try combos like braised pork+egg, sausages+pork floss. A bit on the pricier side but so worth it!

You should try Lương Ký Mỳ Gia eatery in Bình Thạnh District, particularly their duck noodle soup or Mì Vịt Tiềm. From my perspective, it is the best chinese noodle eatery, always crowded with local dwellers and tourists. You should eat there at 3 or 4p.m which is the opening time, you don't want to eat at about 6p.m or later :D Also it is advisable to put the duck to the small plate to make space for your bowl, easier to eat the noodle.

15:12 Bánh Quai Vạc, i think is the Vietnamese version of Pâté chaud(Patê Sô), but with a different crust style. other countries do yuka fries, maybe you can do some parmesan fries or or tater tots with yuuka and shaken salt and pepper like chinese salt and pepper calamari. would be interesting. -and maybe go a little exotic with burger meat?, ostrich, gator, water buffalo, etc. or better yet maybe a Patê Sô shepherd's pie, maybe that's a little plain. maybe a croquette version or Papas Rellenas. i'm a fan of your experimental stuff. interesting take on certain vietnamese foods, some might be good some might not, but that's the fun of cooking and trying.

usually, I won't recommend eating Mì Vịt Tiềm in District 5 Nguyễn Trãi, they tend to be way too expensive for what they're offering. There's a joint in District 6 that's way cheaper, the noodles are way better, the duck meat is crispy and not too dry, and they also sell Chè Tuyết Yến for dessert. The place is called Mì Vịt Tiềm 45 on Chợ Lớn street in D6 opposite a closed Petrolimex gas station, about 40k VND for a standard bowl and a bit more expensive if you order different parts of the duck or more noodles, try it out! You can't go wrong with this one trust me!

I had to look that up as I am unfamiliar with that dish. It seems like there are many variations of that dish, you can look for banh xep, nem chua ran or maybe even banh cam might give you some inspiration

Ordering Mi Vit Tiem in the states specifically Hawaii...I always judge first whether I'm given the pickled green papaya. To me, if I'm given that then I have high hopes of how good the bowl with be.

Never heard pate chaud beef 😁. It’s always pork, some places have chicken but never beef.
