      Do you have a preferred method for taking the skins off? And what about the seeds?

      @@Latebloomershow I usually cut the tops off, score an x in the bottom and throw them in freezer bags till I have enough time to make sauce. When they thaw, they slip right out of the skin. If I don't want seeds, I send them through our little tomato processor.

    I put my quartered tomatoes in a roasting pan for about 30 minutes in a 300 degree oven. Then I let them cool, peel , then add all my herbs and seasonings and tomatoes back in the pan and cook for another 30. Then I either put them in blender or use the same Emersion blender then process it n water bath. It is delicious sauce and easiest for me

      @@Latebloomershow yes to me it’s a lot easier than putting the tomatoes in the boiling water , the peel slips off just as easy. I used to do the boiling water til I discovered this. Happy gardening.

    Kaye: So much unnecessary work to par boil tomatoes and skin them. My recipe is almost exact except....I do 20 lbs at a time. Put them frozen directly into my 18qt Nesco roaster. I usually let them stew over night on low. Then I use the immersion blender. I then run it through my cone colander with the Pestle. It gets rid of all seeds and skin. I then add all of the other ingredients....garlic, parsley etc. I usually cook it down but I LOVE the idea of the cornstarch to thicken!!!! Just thought I would let you know just in case you end up not liking the seeds in your pasta sauce. I don't. So hope this is a shortcut for those that are lazy like me and want the nesco to do all the work. Lol God Bless and thank you! Looks yummy!!!!!

      Oh yes I would love that but I don’t have the roaster. I have a slow cooker but it’s not that big it doesn’t hold as much as that one pan I have and I don’t have the colander and pesto but I certainly prefer this method. Someone else wrote and said they just roast them in the oven and then I could simply I don’t know if you lose any of the juice by cooking it that way but I need to do something like that today because I have so many more and I really dislike taking the skins off.

      I have a mill that takes the skin and seeds out but it’s SO much work. I used that with elderberry. I also have the steam juicer, which I used last year.

      @@Latebloomershow My Nesco with the ceramic insert was not expensive and my pestle and colander was cheap too. You can find them at Good Will often times. (colander/pestle) If you plan on growing oodles of tomatoes those two items are well worth the money spent. I wouldn't even think of growing tons of tomatoes without those two things. In fact when I planted my 11 tomato plants I paniced because I didn't have my roaster. Luckily it came in before all my tomatoes came in. Yes you get TONS of juice. That is all you get is the juice when you do it this way. That is why I like the cornstarch idea. Otherwise I just leave it in the roaster to cook down then add all the other yummies and let stew for an hour to infuse all the herbs. Hope this helps Kaye.

    Corn starch? Italian? Go on....! 😆 And if u must, use clear gel instead of corn starch. It's stable for canning.

    Wow Kaye that pasta sauce looks awesome! Thanks so much for sharing the recipe and can't wait to try it. As for other ideas for tomatoes, just made a batch of pico de gallo and hope to make some tomato juice for chili in the fall. You could also make pizza and sloppy joe sauce or gazpacho soup. I love sun dried tomatoes in olive oil too for summer salads. Have a wonderful weekend and stay cool - we've got 97 today and just got A/C fixed. Blessings..

      I can make tomato juice in my juice steamer but I did that last year and I didn’t use any of the juice🤷‍♀️. I I’d like to make salsa but you always have to have chips and that’s some thing I have to buy so it’s not really an item you can prep. Hm.

      @@Latebloomershow Wow I use tomato juice to drink (think V8/bloody Mary's), for chili, macroni & tomatoes, gazpacho or tomato soup, and for cooking in rice dishes. It is so expensive for organic in the stores so you are sitting on a gold mine of homemade organic tomato juice and it is so healthy for fighting inflammation too.

    Great video .! I will check out the lids ! For the first time in 45years ,I have no tomatoes on my plants .The heat has been brutal but other crops are doing well... strange . I still have plants in plugs and will set them out in my fall garden.and greenhouse . I have many jars of whole tomatoes, soups and juices as well as cooked down sauces and ketsup ..so no need for more than a few salad tomatoes , I usually add nothing but a bit of real salt and lemon juice to my jars and make sauces in winter when my wood stove provides free heat and warms the kitchen. I use all my own dried peppers and herbs .. I try to only heat water in my kitchen in summer for my morning coffee . This year with 10 -5gallon buckets of pears ,I will be canning a bunch of pear juice and making vinegar with the pulp. I water bath the jars at night when it's cooler... hope this helps with your huge crop!

    Love the music! The recipe looks delicious . I usually just simmer my sauce until it is reduced so never add thickeners.
    No basil for me this year but have all the other seasonings in my herb garden. The paprika is new for me in spaghetti sauce but will try it. Thanks, Kaye!

      @@Latebloomershow Haha, I was thinking the very same thing, Kaye! Who the heck cooks in a perfect kitchen with perfect hair, nails, make-up and fancy clothes?! I look like old mother hubbard with my hair in a pony tail, apron sans make-up. My nails are cut short for gardening and cooking ( isn't it kind of gross to cook with long nails? Just sayin'!)
      Yes! I thought those romas looked plastic! I kept thinking, "I hope she is not going to eat those". My kitchen is 2 feet wide by four feet long ( prep area with sink, stove and fridge ) so no luxury here!
      The soup is delicious, though, and maybe worth canning for chilly days. I am making a batch this morning. Thanks for the inspiration to do something with the ugly tomatoes growing in my back garden, Kaye!

      He named it "Randolph" and "1942" The Randolph did better for me.
