Can I just say that I love that you still do most of your recipes with charcoal, wood and smoke? I'm german speaking and most german BBQ youtubers just plop their dutch ovens on their gas grills so that everything becomes a stew where you wouldn't even know the difference from something you prepared in the kitchen.
I Made it, it was spectacular and the whole family loved it. I used a 7.5qt Dutch oven and 2 x 2.1 lb chuck steaks about 2 inches thick. sorry for the standard measurements I am from the great lakes state. Love your channel and the crew.

Stews are my favourite winter dish. UK has many regional ones, like the rest of the world. Up north the famous ones are Lancashire hot pot (more a casserole done in the oven) and Scouse (Norwegian sailor origins hence Liverpudlians are called Scoucers). Two of my favourite to cook in the winter are ox tail and lamb breast/flank. The lamb I just do hot and fast then put in a pot/Dutch oven with onion, garlic, mixed herbs, potato (helps it thicken up and last a week!) carrot, parsnip. Simmer it until the meat falls odd the bones. Add dumplings 30 mins from serving, (suet , flour, salt pepper herbs). Eat what you can then water it down as soup during the week for soup. For ox tail it is a very cheap cut still. I fry off onion and garlic, then add the ox tail (previously smoked), red wine, tomato purée, beef stock bay leaf, and what ever veg is around. Turns out like a stroganoff but with bone and dumplings..... you need suet dumpling with stew. They can replace the carbs if you don't wan the potatoes!
Jeez Roel, that made my Dutch heart pounding again, i have been on the other side of the big pond way t long to have forgotten about a good'ol hachee. The added smokingstep really made a difference, amazing flavour! thnx and keep it up!

This is pretty much how I've been cooking venison necks and shoulders for years. You could used damn near any animals front quarter for this. Simple, flavorful and easily repurposed for different meals throughout the week. Though, I can't stand cooked cabbage.
That's stewed red cabbage, also a typically Dutch thing. Its main ingredient is red cabbage, of course. Shredded fine (like coleslaw consistency) and stewed until tender with an about 3 parts cabbage to one part water ratio. You should add various spices to it for during the stewing process. Here things may differ per recipe and to taste you can add cinnamon, cloves, bay leaves, juniper berries, nutmeg. Also add some sugar and vinegar. Apple is a common added ingredient in the final stage (so the apple still has a bit of a bite when the cabbage is done) and sometimes I have encountered raisins. When the cabbage has stewed, bring the dish to taste with a bit of butter, salt and pepper.
You guys are perfect together, like peanut butter and jelly. Dutch food isn't bland at all. If it is bland, it is only because YOU made it bland. You guys do go pretty heavy on the mayo love though... As a culture. lol

try just shred the cabbage and add lots of salt let it stand for 3 hours and try it, tomorrow it will be even better
