It was another incredible day of Chinese food in Yunnan. It was a cold and rainy day, so we started with some noodles. Then we went to Luxi’s cooking class and learned how to make Chinese hot chili oil, and finally ended the day with an amazing copper hot pot of a special type of yellow beef.
Breakfast at Liu Pan Shui Mutton Vermicelli (六盘水羊肉米线) - Located in Dali Old Town, we started off the cold and rainy morning with a bowl of mutton vermicelli. The noodles were so warm and soothing and the mutton was fragrant. But probably the best thing about this Chinese breakfast was the hot chili oil, and Luxi said they had some of the best!

Wan Bao Hong Cheng Tea Shop - After breakfast, we walked over to a local tea shop to sample some Yunnan teas. Yunnan is famous for growing tea, and especially for pu’er tea, which is black, aged and fermented tea. It was a great learning opportunity, and as a tea and hot drinks lover, I fully enjoyed it.

Rice and Friends - Chinese Cooking Class - Luxi was our guide for a few days during this Chinese food tour trip, and she also owns a cooking school in Dali called Rice and Friends (riceandfriends..... We first went to the market and bought a few ingredients, then we went back to her cooking school to learn a few dishes. The highlight for me was learning how to make Sichuan style hot chili oil - a condiment that you can use for just about anything and everything.
Yellow beef copper hot pot - Yunnan is known for its speciality yellow beef, and also for a style of copper hot pot. The beef and broth was insanely flavorful, and we added in a few vegetables. One of the best things about this type of Chinese hot pot is getting to make your sauce. And we must have added about 25 different ingredients and seasonings to our sauces. It was an outstanding meal, one of the best meals of my trip to Yunnan, China.

The misconception that people with chili oil is that it's only spicy. But in fact it is mostly fragrant, adds another depth to the flavor. You have to try it to understand that.

You can easily detect a theme and madness to Mark: he loves food running down his chin, covering his face, falling out of his mouth, chewing open mouthed, talking with massive quantities of foo in his mouth, while taking the biggest bite and shoveling it in. No bite too big! Great vid!

What were the spices used in the hot oil recipe?
Ginger, Star Anise and Sichuan pepper.
if you have a good container and cloth bags of powder lime, you can keep that puer for decades and bring it back out for an even more refined flavour. good multi-decade old puer are worth tens to hundreds of thousands of RMB per Metric catty(500g).
Sadly 云南 (Yun Nan) is so populated with tourists that most people who live there are not actual 云南人 (People from Yun Nan). People there are mostly from other provinces who went to Yun Nan to make money. I think going to Yun Nan's countryside will really give you a better representation of what Yun Nan's food, tea, culture, etc. is really like.
Karlen Bell Funny how you mention that when every single person in the video preparing or serving food is unmistakenly Yunnanese. Luxi is from Sichuan, yes, but she is deeply passionate about local cuisine and always works with the most genuine local artisans that are available to establish a deep and authentic connection with local culinary culture. I agree that the further you go into the villages the better and more authentic the food. And indeed many people are fooled with lackluster Chinese dishes in the tourist hotspots of Yunnan, when they could be having the best of Yunnanese cuisine has to offer. Have you seen the food Mark has been having on his Yunnan video series? Do you think any of the dishes is an inauthentic misrepresentation of local flavors? I don't think so.
flengs , It might look authentic, but does it taste authentic? Probably not. To be honest, visiting to Yunnan really was a bad experience for me b/c most of the people who work there are not from there. Therefore, it is not authentic in any way.
Karlen Bell Oh sure, if you don't know your way around, it is hopeless. You'll end up in dismal restaurants, inauthentic and over expensive. Must have been such a waste of your time. If you know your way around, though, there are PLENTY of really interesting local delicacies prepared by passionate locals. I'm so sorry you missed all of that when you were there...
It was hard to know my way around with all the non-Yunnan people there. If I were to go to Chengdu, Leshan, or even Changsha, I don't need to struggle much to know my way around those places. Because it was hard for me to know the way around there, so I suggest people to not go there. If people really wanted to go there, go to the countryside.

it is beef from yellow cow(as the girl tourist said). I seen that on the farmes of Ontario, Canada but could be slightly different taste and texture due to different area. He just copy her saying 'cow meat'. 😄
Merry Christmas Mark, Ying and Micah. I hope that you all had a lovely day. Christmas is so much better when you have children so you can see it through their eyes. Micah has to be the cutest little boy ever. It was awesome to see him standing and hearing him as he starts to learn to form sounds (Once a teacher always a teacher sorry). It was really interesting watching the chilli oil being made. I can see why it has so much flavour and I have a new appreciation for it. I thought that maybe it was just oil with chilli flakes but the heating of the oil would mean that the oil is really infused with the chilli. Thank you for sharing your trip with us.
