My mum’s Chana Magaj recipe

- I literally just made this AGAIN and I can’t wait to dig in! So thought I better share it with you again so that you have it on hand, p.s. there is a small change in the video that you might notice.
This is my mum’s recipe and of course I think it’s the best, coz I am biased but also if you trust me, you’d know I’m right on this one. lol
Disclaimer: I don’t know where the recipe originated, I’m sure many aunts and mums likely have the same or similar recipe, but yhoooooo guys, this was so so so easy! I was shocked!
Chana Magaj by Fathma Maasi
500g chana flour (chickpea flour)
62ml milk (quarter cup)
1 large tblsp ghee
Rub the above together to form a fine breadcrumb consistency. Can use a food processor as well but ensure the crumbs are fine.
2 cups ghee
250g Klim milk powder
450g icing sugar
Half tsp elachi powder (cardamom)
Pinch of nutmeg powder
3ml rose essence
Sift the breadcrumb mixture into another bowl, help through as much as you can by rubbing them into the sieve, reserving the ones that do not sift through.
Add the ghee to a pot with the “crumbs” that didn’t sift through, braise on a medium to low heat until a light golden brown. Then add the balance of the very fine crumbs and cook for about 45mins - 1 hour on a fairly low flame.
Do not scorch!
Once done switch off your stove and cool slightly. Now add in the balance of ingredients and combine well.
Scoop on a baking tray lined with baking paper or add to a square tray.
Garnish with chopped almonds and let it set.
Once set you can cut into shapes and wrap as desired. Can be kept in a Tupperware at room temp.

Store in your freezer for 6-8 months.

Thanks for the info ... I didn't know first choice has milk power... I also don't support any genocide products..... Now can you find a substitute for Nestlé cream that we have to use in the burfee
I posted a nestle cream sub a while back, the Al Taj dessert cream, hard to find but when you do then buy a bunch of it
