You could try alternating the cheese and meat types for more layers of complexity.

Next time, bake them instead of frying. I made nacho cheese mazzorella sticks and the oil washed the cheese off. Baking keeps the cheese on them

Not to sound psychotic, but when the breading portion was done and his finger tips were saturated in flour and doritos dust, then he said "now deep fry your fingers," . I low key wanted to try that. "That might be delicious!!" I love Doritos.

He done the coating process wrong.
1. Put in the egg wash.
2. Into the flower.
3. Back in the egg wash.
4. Now in the crumbs mix.
He dipped it in flour first and then egg wash, which don't make sense, because the surface or flour is not wet to stick on. That's why in the video the batter was falling apart and he was having a hard time with it.
