Thinning Your Knives (A Demonstration)- Japanese Knife Imports

In this video, I show how double bevel knives are thinned. For the purposes of this video, I show these concepts using Japanese water stones (the stone in the video is a Gesshin 2000 grit stone, but in reality you would likely need to start with a coarser stone like our Gesshin 400 girt stone).
