That character with the wings is Angela Ziegler, her Overwatch code name is "Mercy". She's a scientist too, she is a healer who can fly with her mechanical wings, and actually helped Genji heal from his injuries after fighting with Hanzo the first time. Unfortunately, Genji ended up becoming half cyborg because his wounds were too great, but Angela did the best she could with healing him.

Fun fact about Reaper, the reason he’s able to turn into mist is because the cells in his body are in a constant state or deceleration and regeneration, leaving him in a constant state of extreme pain and his body deformed. The reason for this is because after Overwatch fell from the headquarters explosion, Moira experimented on Reaper’s body and made him this way, under the guise of “saving his life”.
There’s still one more to check out, it’s the animated short for Kiriko, another playable hero that came out for Overwatch 2. The short is called “Kiriko”.

Ok so the last 2 cinematically after the credits are from another blizzard game named “Heroes of the storm” that game plays like league of legends but the characters in heroes of the storm are a mixture of all blizzard games.. so these 2 cinematics were an announcement of genji dva and Hanzo being added to heroes of the storm. The first one had Diablo from the “Diablo game”, the second one with hanzo had alextraza which is from world of Warcraft. Basically the last 2 are not canon it’s for the lore of the other game. Btw I would recommend you watching Kiriko cinematic and on top of that there is a whole list of “Overwatch Origin stories” these are 1 to 2 minutes videos that explain a brief back story to some characters from overwatch with stylized animation. Other than that you watched everything maybe you can try and watch all of their gameplay trailers which are cool too, they showcase the characters in game too.

The last short with demon and dragon ain't from overwatch but heroes of the Storm (a MOBA where all Blizzard character's fight), also Hanzo and Genji ain't dragons, they are just human.
The main story goes that Overwatch got disbanded prior to OW1. The game still lets you play cuz, lets be real, it wouldnt be a game if you couldnt. Every cinematic leads to OW2 where the team gets back together, except for The Wastelander which came with OW2 and introduced Junker Queen to the game. It was put there because this series of cinematics and cutscenes were in chronological order lore wise. We were supposed to get a PvE mode for OW2 which wouldve expanded on the story, but we didnt. It is supposedly still in development but i doubt we will see it for another year or so, probably more knowing Blizz. Those last 2 cutscenes were from Heroes of the Storm, a League of Legends clone made by Blizzard with characters from all Blizz games (Warcraft, Starcraft, Diablo and Overwatch). Edit: The gang Reaper, Widowmaker and Sombra are from is a terrorist group called Talon, Omnics are the robot "race" if you could call it that, and Null Sector is yet another terrorist group but composed of Omnics if i recall correctly.
