The dish originated in Milan, Italy. The traditional protein used is veal but is also delicious with chicken, as shown in the video, and thin pork cutlets.
It's look great. I almost do it the same way you do. I'm wondering what kind of bread crumbs do you use on your chicken? It is plain bread crumbs, panko or Italian bread crumbs? I know every one is different. I like to try your way too. Thank you danny for sharing your video. 😁
When breading protein any recipe I have seen or read by a chef, it calls for seasoning every step of the breading process. The flour, eggs and breadcrumbs. And a sprinkle of salt when the chicken comes out of the pan fry is a must, as Danny did.
That's correct- it's important to season every step for a variety of reasons, but most of all for flavor. A lot of times when you dip the chicken in the buttermilk or bonding agent, it will 'wash' the chicken of the salt and pepper. Seasoning every step ensures that you have the best flavor in every single bite. -Andi

The salt added was Himalayan salt, which actually contains about 1/3 the amount of sodium than regular salt. We always note in the recipes that salt and pepper are ‘to taste.’ We don’t promote every recipe as health conscious- so definitely make it with what’s best for you and your family. -Andi
We always list ‘to taste’ in the recipe. Also, Danny used Kosher salt, which tends to have a less ‘saltier’ taste. You can always cook with your preference. :) -Andi
