Galicia is well known for its ‘potaje gallego’, of course. Asturias for its deservedly revered ‘fabada asturiana’. Finally, wine country has its ‘lentejas a la riojana’ as well as the bottled stuff. I’m not sure how extensively you have travelled in the Iberian peninsula having just discovered your channel.

Pete you are publishing new dishes faster than most of us can cook them which is commendable. I enjoyed the robust working dude get-it-done demeanor of this episode. I cook a lot on a boat galley and these one pan braised dishes are very handy and delicious. Thanks again for the production quality and effort.

Oh, by the way, you've asked for suggestions. Years ago I attended my friend's wedding at her home town of Berga in Catalunya. Wonderful mountain town full of history and local cuisine. I suggest you visit during the celebration of the Patum festival which coincides with Corpus Christi (end of May this year). The festival is freaking outrageous! You'll love it. Look it up.

Growing up in a Puerto Rican family I remember my mother making a similar dish called Asopao. In addition to chicken it contained pork and potatoes. A Caribbean risotto of sorts. Think I'll rry your recipe this weekend. Cheers mate.

I enjoy your videos. It always intrigues me when your chickens over in Spain look to have a yellowish skin, while chicken here in Australia doesn't look like that at all.
Spanish chickens must be on a saffron diet, giving them that unique glow! ... or they are fed corn.

Found your channel a few days ago looking up bourride because I remembered Floyd always championed it. You've gotten me in the kitchen a few times already this week, I appreciate it.
I must say your approach is very reminiscent of Floyd's, he wasn't one for measuring either or adhering to a single cooking dogma. You could be the next!
Your content is astonishingly high quality for the traction you have - I agree with others that have said as much. I suppose provincial cooking is somewhat of a niche, but just the cinematography and and scripting and quality/authenticity of the cooking should be enough. I say just keep at it. I'll be watching as long as you do!

This is very similar to lebanese riz a djej. The main differences are in the spice profile and roasted nuts for topping. It looks delicious 😋

ChatGPT says a Rafa favourite is "reportedly "pa amb oli," which is a simple yet delicious dish consisting of bread rubbed with tomato and olive oil, often accompanied by cured ham, cheese, or other toppings. Nadal has mentioned in interviews that he enjoys this dish, which is a staple in Majorcan cuisine." all the best.
