Hades defeated by his own weapons (if Kratos didn't have the Claws he would have a really hard time defeating him), Poseidon defeated with the help of Gaia(if Kratos was alone it would've been a lot harder), Zeus defeated with the help of Pandora's box(it would be impossible for Kratos to win without it), Ares too(although he could've defeated him without it, but maybe not in GoW1), Heimdall with the help of the Draupnir Spear(impossible for Kratos to win without it), Baldur with the help of Mistletoe(impossible as well), Odin with the help of Freya and Atreus(Maybe he could be able to, but he would have a hard time). So Kratos is very strong BUT... He needed help most of the times, maybe he could do those killings alone with High or Extreme difficulty. Thor on the other hand was one of the opponents that Kratos managed to defeat without any assistance.
Zeus is more durable than Thor, Zeus was weakened and was stabbed in the stomach by the God killing blade (The Blade of Olympus) And still got away and recovered Instantly and still give rage filled with variety of weapons Kratos a hard time. Thor, meanwhile, Died after being weakened when he was stabbed in the chest by Odin. Zeus gets durability
I dunno m8, every time Zeus got stabbed by the BoO, it was pretty much the end of the fight, GoW2 Athena had to jump in to save Zeus, in GoW3 Zeus had his astral form as his last resort once Kratos stabbed him and Gaia. Thor before being stabbed by Gungnir (a really powerful weapon by itself), Thor got hit by Leviathan multiple times across the game (imbued with Jorm's venom) and the other weapons Kratos had like BoC and Draupnir (Thor tanked two explosions from Draupnir, and it ripped Heimdall's arm off). And let's take in consideration Thor was fighting Jormungandr, Ragnarok and the invading armies before fighting Kratos.
Thor was stabbed by Kratos over 7x tho and feel nothing happen and also he got stabbed by Kratos spear. Thor also tanked the explosion of Kratos spear that explosion rips heimdals arm
