Also, this boat was in great condition for 2001. I guess it must have stayed in Europe for most of its life... and was not used much even there. Hoping to see more older boats on the channel... perhaps from around 2010!

Volvo Penta only does inline 6 cylinder diesels at the largest, some derived from truck/industry engines (from other Volvo products), some specifically made for marine use. Being from 2001 and if 700hp is correct, it's likely a pair of TAMD163-family engines. 16 litre inline 6 marine diesels (TurboAftercoolerMarineDiesel). Depending on the model, they also produce around 2700Nm or torque. Lovely to hear them bring this boat up to speed.
I can't remember what model classification it was now. But i do remember the 70ft rooster tail we were kicking off the stern and how excited i felt for about 3 days after doing this shoot. OMG so much fun!
A couple of practical tips: Almost the only thing that looks dated on this boat is the inside door handles. They can be easily replaced if desired. When it comes to the tiny TV sets from this period, I would suggest ripping it out before trying to sell the boat. Just hang a picture or something in its place. About the power sockets in a foreign boat, using lots of aussie converters gets tiresome after a while. Instead, one can actually replace the sockets.
The Arneson drives actually make it about 30% more efficient than an equivalent shaft drive boat. I’m in the middle of buying a Baia 48’ and that will cruise at 26-28 knots burning 150l an hour combined.

It's absolutely enormous! The beam in the cockpit is very noticeable but the rooster tail is what does it for me! haha

If you have to ask about fuel consumption this is not the boat for you!
