Data centers need a lot of cooling infrastructure. Huge data centers, Cloud server farms and AI server farms, etc. all consume a lot of power as well as a lot of water for those big cooling systems. These cooling systems need fresh water and can't run on sea water. That's why many Data centers in the US are located in Wisconsin state or around the great lakes area, where fresh water is abundant. People also need to be mindful of these things.

If Data centres create that much heat, they need to be relocated to colder countries/regions. Then that heat can be harnessed and used up for general heating purposes. Of course these data centers need to be powered by renewable energy sources!

After cooling servers water goes into cooling towers to reduce the temperature and same water gets reused over and over again.
Evaporation causes water loss.most cooling towers operate on evaporated cooling principle.

Few datacenters use direct liquid cooling because its costly but it actually is more energy and water efficient, most of the datacenters actually use Air Conditioning units where even more water is required to cool down AC units. In both methods water is in closed loop system and gets reused over and over again, one time cooling pond filling is required, its not like servers are drinking water, this news is bit misleading.

Your car radiator uses water for cooling too. But it needs to be topped up rarely. Agriculture is the biggest consumer of water by a huge margin... Let alone the effects of chemical fertilizers finding their way into the global ground water reserves and river systems.
