"Gabbagoul" is a NYC Italian American slang for Capicola. Its used the same way some NY folks call a well cooked, red tomato pasta sauce "Sunday gravy." Upstate, we call Italian foods by their actual names. Marinara sauce is called Marinara and not "mar-i-nod."

Gabagool is actually the Sicilian word for it. As opposed to standard Italian. Most Italians in the New york area are from Sicily so that makes sense.
