  • Chef Robert Wiley shows us how to do a traditional southern style fish fry with fresh catfish and hushpuppies. In keeping with tradition, Wiley also prepares hushpuppies, a cornmeal fritter, as an accompaniment to the catfish.     The fun part is catching them and cleaning them yourself. I learned this as a young kid it is a valuable tool!

      Candace Vaillette I just cleaned my first cat fish today. I have to say it took alot out of me. I feel drained having cleaned them up.

      After you gut them,
      You have to nail the head to a board slice the skin all around the neck, then get pair of pliers and start pulling the skin down. Very fast way to do it. Otherwise it is a wrestling match to clean one!! :-)

      we had big BIG nails with the heads cut off and sharpened in a few of the fence posts out back, you just 'spear' the cat fishes head on the nail and let the body hang down, thats where we gutted and peeled them..

      You can clean them quite easily including filleting and skinning all in one step. I started with the nail in the head method and then skinning without the nail and finally now I fillet and skin them using an electric knife.

    I know!! ;-) Chef Wiley lived and studied in Kentucky for awhile and embraced many of their cooking traditions. And fyi, there was not a nibble leftover afterwards - it was some of the best fried catfish and hushpuppies I've ever had! =)

    The reason it has the muddy or murky flavor is because you need to cut all the red and gray and dark meat out of them . I saw a lot of the nasty meat still left on those fillets . Once you clean that away and let soak in salt water over night , it's ready . Catfish are really under rated due to the fact they are not clean correctly . I clean and cook them and there is NO nasty taste .

      ALSO it depends on where the fish lived, the colder and cleaner the water the better your cat fish will taste, IF you can find a cold clear and RUNNING stream with catfish in it you will have the best meat around, they are firm and sweet flavored.

    My Dad gets them battered and puts them in the freezer for 6 hours then drops them in the deep fryer ... they don't taste oily doing it that way.

    I really love a flour/cornmeal 50/50 ratio fish fry with hush puppies omg man...I just love it, that looks so good man!

    I like to make a wash with milk, egg, mustard, garlic powder, and Tony's Creole Seasoning. Fish is soaked in this mix until ready to be fried. You then move the filet directly to the mixture of cornmeal and flour mix which also contains garlic powder and Tony's.

    Wow I remember the first time I had catfish and hush puppies. Surprisingly delicous for a bottom feeder. I might have to get in touch with Martha Stewart she is a awesome cook and baker.

    Those hushpuppies look good. I usually dont go southern seeing as I am from Chicago but I do fish and catfish nuggets are on my plate quite a few times during open water season. They might go well with bluegill too.

    Hey, Great advice on spice additives! I know that from experience that catfish not cooked long enough is a little mushy and cornmeal allows you to cook longer to firm cat up a bit more ,which helps allot. I want to do up some fritters..making me droolll.....Great vid...Mark

    One pot solution if you are looking for a new delicious and balanced way to cook catfish nugget stew - add one lb of freshly thawed nuggets to a pot, dump in a can of diced tomato and green chiles (very popular canned product in the tomato sauce or Mexican foods aisle) and a cup of frozen cut okra, optional is a tablespoon of capers. Simmer 5 min and serve with rice, bread or ramen. For a slightly less strong catfish flavor, simmer the nuggets one minute only in boiling water and drain before adding ingredients. Some larger stores will even have the tomato, chile and okra all in one can. The chiles are mild, don't be intimidated. This gives you vegetable vitamins and fiber with no frying oils at all. Also the most energy efficient way to cook in one little pot. I came up with this on my own in a flash of inspiration. I have also baked nuggets in a toaster oven foil tray seasoned with capers only, delicious and cheap!

    I asked Chef Wiley, and this is what he said:
    "I would use peanut oil if possible or any type of lightly flavored vegetable oil on the shelf (canola, corn, soy...etc). I would avoid olive oil do to its strong flavor. In the old days lard would have been the frying medium of choice."

    I never understand why people click on a recipe to say negative things. There is no ocean where I live, so I eat the fish I can get economically most times. No need for you to say what you eat is better blah blah blah. That’s your opinion and this is a teaching video not a debate seminar. The foods we grow up eating will always be near and dear to our hearts. If you are closed minded watch only your culture, parents recipe or broaden your horizon.

    Grating onions makes it like applesauce and onions are good for you I put mine in a ziplock baggy and it gets a pink juice in it and I add it to everything. and the onions last longer.Its really good for deviled eggs.

    Great video! I have one question. At the 1:23 mark in the video you talk about Vinegar and cayenne but you don't show/tell how much you use. A little help please, thanks!

      As for the vinegar, I believe Chef Wiley is referring to the ‘southern-style’ hot sauce (the written recipe calls for a Louisiana style of hot sauce), because “some particular styles are high in vinegar content similar to the American Louisiana-style sauces.”
      Hope this helps and you have a chance to try the recipe - it was so good!

    I applaud your effort, but have a question--where did you get this recipe? I was born and raised in Mississippi and ate catfish and hushpuppies all my life. I have NEVER heard of anyone marinating catfish in hot sauce, or putting jalapeno peppers in the hushpuppies. Just curious about where the recipe originated.

    Important question, how long do you cook and at what temp? when your catfish is chewy/rubbery is it overcooked or under-cooked?

      Under cooked. Fish gets flaky when it's done. Overcooked fish gets dry, but its still flaky.
