Great demo Kevin. One item that may need adjusting is the yeast qty: 1/4 teasp = 1gm (not 2gm), and 1 teasp = 4 gm. Did you mean 1gm or 2gm for the Biga? You said 1/4 tsp = 2 gm. thanks
Thank you, Ben - Sorry for the confusion. I used only 1/4 teaspoon instant yeast (1 gram) for the Biga, although my notes said to use 2 grams. No harm -- the Biga was awesome. (I used 1 teaspoon instant yeast for the final dough.) Will amend the recipe to read "rounded 1/4 teaspoon yeast" for Biga.

I screwed up. I thought 250 grams of water would be 2 cups because 250 grams of flour is two cups. I was SO excited because my biga DID look live and activated but I learned I had a sloppy mess.....
Ciabatta is my favorite bread. You’ve simplified the process, I already have ALL the ingredients … I’ll give this … a go… thank you

I used my conventional (not convection) oven. Use steam during first 5 minutes of baking. Total baking time is usually 30 minutes.
