    Underneath all that personality and talent was a man and a chef very tormented. This talented chef was battling depression. RIP Chef Bernard Loisseau.

      u have to evolve and change with the times he was in debt and after working 20 years everyday to get 3 stars the thought of losing that and depression... he worked that day then he shotgunned himself

    Basic and sophisticated, a great chef.
    I also was shocked by his death.
    Rumors say that is was they didn´t give him a 4 Michelin star!

      A chef cannot get 4 Michelin stars. They only go up to 3.

      Lard is cured pork belly. I.e bacon or Pancetta in Italian.

    He committed suicide after loosing a Michelin star. It casted quite a dark shadow on the Michelin thing itself, as it was driving chefs to such an extend as to committing suicides.
    With respect to this particular video, I don't like the fact that the squab was strangled just to retain taste. That in my personal view is too much cruelty in the name of gastronomy.

      i think that by strangulation he means breakage of the neck. this is a very common, fast, and most humane way to dispatch hens, chickens, rabbits and others. The blood is of course drained after a while.
