It all depends on preference, but a lighter, more neutral tasting mayo like we're all used to would use just whites. And that's why a bunch of Japanese recipes use mayonnaise, because their mayo actually taste good lol
Nope - you can use whole eggs in mayo if you add an emulsifier like mustard. The outside of mustardseeds contain the emulsifier mucilage which you want for your emulsion. By using whole grain mustard, they did not incorporate enough of that mucilage to emulsify the whole egg and the oil. Egg yolk contains enough lecithin to emulsify the yolk with oil, but not the yolk and eggwhite with oil. So you could either use ground mustardseeds, soy lecithin or nut based proteins to bind a mayo without eggyolk, or even without any egg at all. Mayo without any egg in it does stretch my personal definition of a mayonaise to an uncomfortable degree though.
As a classically trained chef, im with Joe on this one. Yolk, oil, mustard, vinegar. That is classic mayonnaise, anything else is an aioli with different ingredients.

Oh my god as soon as I saw the box, I was like "I remember what they are talking about now!" I was a young kid in the 90s and I remember seeing the commercials for this in the late 1990s. That box I've seen so many times. My family was not into fast food but I have a clear memory of going to a McDonalds with my friend and her parents, her dad got the arch burger.

Oh my god as soon as I saw the box, I was like "I remember what they are talking about now!" I was a young kid in the 90s and I remember seeing the commercials for this in the late 1990s. That box I've seen so many times. My family was not into fast food but I have a clear memory of going to a McDonalds with my friend and her parents, her dad got the arch burger.
