A few corrections: 1) The speed depends on the train model. The one you took appears to be a CR400AF-Z. That model could travel up to 350km/h, not 300. Of course there are also slower and older models. 2) The "first class" you showed is actually the business class. It may sound weird, but this is how the class tiers go on a Chinese high speed train: Second class < First class < Business class. Second class is the cheapest seat, it is a 3+2 configuration, and the seat is about as wide as economy class on an airplane. You do have more than enough legroom even with second class. All classes come with a table and can be reclined. First class is in a 2+2 configuration. It costs around 50% more than second class, and for that extra you get a wider seat, a larger table, a footrest, even more legroom and some complimentary services. Some newer first class seats also have electronic reclining seats. Business class is the most expensive but also has the most features. It costs around 2x the price of second class. For that you get a even more premium seat, almost unlimited legroom, your own controls and lights and priority service. On some newer trains you also get some extra amenities to the side, like in the CR400AF-Z (in this video) and CR400AF-C, and with some (CR400BF-Z and select CR400BF-C) you get your private compartment. On the CR400BF-C you also get dimmable windows like those in the Boeing 787.
I took one from HK to Beijing and westward to Xi'an. What a wonderful experience. I booked all my tickets in the US, and picked them up at the Hong Kong station. I wish we had trains like that in the US.

China had a pretty decent train network to begin with. Yes, some fast trains are needed, they can greatly benefit the overall system by creating a central lane, but what chine doing right now is incredibly stupid. You dont need fast trains everywhere. If its barely used all the money you spent building and maintaining it is thrown out the window. If I recall the numbers correctly, normally public transport in average looses around 30-50% yearly. chinas high speed rail looses something like 150% meaning they need to spend 1.5 amount of the money maintaining it that they get from ticket sales and other funding. Also high speed rails cant be used for cargo which is one of the biggest benefit of regular trains.
