I think what he meant by the samgyupsal being boring is that the kawali added a different dimension with the crispy skin. While you need the help of the veggies to get that effect with the samgyupsal. So I don't think he's really saying one tastes better than the other, it's just that heads up bec. Kawali has different textures it makes eating the other one boring.

Then once cooled down, let it sit on the ref for few hours so the fats will be absorbed. That way, when you fry it, it won't splash too much oil and bring out the crispness.

In Philippines, if someone feel that they already drunk too much and wanted to stay just for pulutan and then if no one is watching before they drink, they will pretend that they already drunk the alcohol but the truth is they thrown away the alcohol. But in Mr. Bulbul's case, he is really STRONG!
Always have the lid on whenever you cook like that, and if the other side is cook, turn off the stove then flip it and turn it on just to avoid oil splatter.
Start with only low fire and cover it when it's starting smell nice then put it in medium high but if you ask my technic I fry letchon kawali in the oven under 150 degrees same procedure boild Intel tender in water salt whole pepper with carrots and Chinese wine after boiling when the meat already tender take it out then season with rock salt and pepper but first you have to prick it with fork specially the skin part put more rock salt over the skin that's will make it crispy then put in over for 45 minutes until cooked.
Rule of thumb when deep frying meat (especially large meat). Make sure the meat is not frozen anymore. It should be thawed completely. Not very dry, but thawed out. And make sure the meat is not too wet. Frozen meat has ice particles trapped in the crevices of the meat (kaya yan matigas). Remember that putting ice particles and hot oil together is a recipe for disaster. The ice will be rapidly heated and the trapped cold water will want to radically "evaporate" and be pushed out as vapor hence the bursting and explosion. This in turn causes the surrounding hot oil to be displaced along with the bursts. Kaya tumatalsik ang mantika. So mag-ingat po talaga.
