What a great recipe, I’m so glad you precooked the beef, I followed a recipe years ago that said to put floured meat raw and onion into the pudding. 🤬it was awful the meat was so tough even after steaming for 3 or 4 hours. I have also found on UA-cam a recipe from cats cradle for the fluffiest dumplings I’ve ever tasted using chicken fat instead of suet. I was interested in doing a fruit suet pudding like my nan used to do for us many years ago! I have some fresh rhubarb and apples. I assume the recipe can be adapted, but I am not sure whether to cook the fruit first or just bung it all in and cook for longer in the pressure cooker. Any help greatly appreciated!!

@@louiseideastore1721 It turned out way better than I thought it would. I pressure cooked for 25 minutes with a couple of inches of water. Make sure bowl is well greased and don't pack too much fruit in. Oh and I forgot to add sugar to the pastry first time round and it made the pastry a bit bland! But 2nd one was lovely.
An American friend said "He doesnt eat organs" I dont like kidney but it flavours the gravy so we stack steak, kidney, onions when cooked we scoop the onions & kidney off the top.
STEAK AND KIDNEY PUDDING 4 lambs kidneys 700g braising steak cut into cubes 3tblspn plain flour Salt and pepper 4-5 tblspn veg/sunflower oil 200ml red wine or stock 1 onion , diced A few sprigs of thyme 1-2 bayleaves 500ml beef stock 1tblspn tomato puree For the pastry ; 350 g SR flour 175g suet 0.5 tspn sea salt Cold water to bind A little butter to grease the bowl The kidney can be swapped for 4oz of mushrooms , left whole and stored through the cooked steak and onions Halve the ingredients to make a small pudding for 2

If you do swap for mushroom do the same as for kidney put in after beef is cooked

Generally just salt and pepper but you can also ass garlic powder, onion powder or dried herbs

I add mushrooms to the filling, and chives/ spring onions and parsley to the pastry.
