kyoani is just the indisputable queen of character animation. the kyoukai no kanata dance sequence was released 11 YEARS AGO and is still completely unbeaten by anything else.
And if you watch carefully, you'll notice slight inconsistencies in the choreography like real dancers often experience. KyoAni proved how GOATed they are with that sequence.
And the 2 Shows from KyoAni who are Music Animes (Eupho and K-On) and you dont have really a dancing scene. At least in K-On you got those Banger Endings in MV Style.
There are a lot of KyoAni shows that don't have any iconic dancing sequence. But since dancing in anime is so frequently associated with KyoAni, the ones that don't have any dancing don't come to mind that easily
Don't forget that Koyomi did the "Platimum Dicso" dance as well in the first episode of Tsukimonogatari while Tsukihi was sitting right next to him reading manga.

My favorite anime dance is Hoshiai no Sora's ED. I've never seen an ED that convey its characters' personalities so WELL with a simple dance. Even when you haven't watched the anime and you're just watching the ED, you can tell that Toma is a serious guy that always gives it his all, Maki gets easily distracted and bored even though he's really good when he gets serious, Futsu is self conscious and lacks confidence, and so on.

Honestly the one I felt the most. I don't know if you know about Star Rail but let me explain to everyone interested what happens. They are in Penacony (special planet) where you need an invitation to get in. The Woman asking for a dance is called Black Swan and she is a working to preserve memories and the past. She can enter people's mindscapes to look for memories. The woman sitting at the Table is Acheron, a mysterious guest with a long past (centuries at least) that she want's to investigate. They begin to dance and you can see memories of Acheron in the background. There is too much to explain in each of those, this video is densly packed with lore. Also what she says is pretty important but you get the idea by listening carefully (for the most part). She talks about the Watchmakers Legacy, basically the instructions how this planet has been built and what it is. Many parties have been coming to seek it and were invited though mysterious tickets. Acheron originally didn't recieve a ticket but met the Annihilation Gang (Leader Duke Inferno) who had a ticket and were feared because they were a major threat to some planets and worshipping the god of destruction. Black Swan knows that she killed them and to her it must have been an amazing battle and she starts to investigate her memories about death and killing. She finds that the Anihilation Gang were such a small drop in an ocean of dead people that Acheron didn't even notice them much and almost already forgot about them. The scenes where Black Swan is violated is where she uncovers too many memories about death and completely overloads. She didn't expect anything like that to ever happen to her. Also all memories are drenched in nihility and despair. You can see more memories of Acheron and see feathers flying and guestures like Acheron plucks Black Swan's feathers. Then there is a skeleton of a swan symbolizing that Black Swan lost all control. Then primal hunting scenes show the brutality of her memories and a black hole appears. The black hole stands for the god of the void that rips Black Swan apart and makes her wake up. Also notice the incredible build up in the music from the start to the breaking point and how it evolves further. It is also incredibly well animated with weird face angles and body postures with extreme detail on the clothes and fantastic colors. The voice actresses for both are legendary and the tension between those two projects to the viewer. Also the soundeffects and the mix is perfect. This truly is my favorite dance scene ever in any media. The quality is off the charts.
