  • The recipe of the perfect chai-time snack, mathris made with kasuri methi deep fried till perfectly crisp.
    KASURI METHI MATRI
    Ingredients
    3 tbsps Tata Sampann Kasuri Methi
    Dried fenugreek leaves (kasuri methi) powder for sprinkling
    2 cups refined flour (maida)
    2 tbsps semolina (sooji)
    Salt to taste
    ½ tsp cumin seeds (jeera)
    ½ tsp carom seeds (ajwain)
    ½ tsp crushed black peppercorns
    ⅓ cup ghee
    Oil for deep frying
    Method
    1. In a large bowl, add refined flour, semolina, salt, cumin seeds, crush and add carom seeds. Add crushed black peppercorns and Tata Sampann Kasuri Methi and mix well.
    2. Add ghee and rub till well combined. Drizzle sufficient water little at a time and knead to a stiff dough.
    3. Cover the dough with a damp muslin cloth and set aside for 30 minutes.
    4. Gently knead the rested dough and take a small portion and shape it into a ball.
    5. To make the matris, gently flatten the dough ball between your palms or slightly roll with a rolling pin. Prick all over with a fork.
    6. Heat sufficient oil in a kadai, drop in the prepared matris and deep fry on medium to low heat till golden and crisp. Drain on an absorbent paper and sprinkle salt, dried fenugreek leaves powder.
    7. Store in an air tight container once they have cooled to room temperature or serve with hot tea.
