We just processed our first 3 pigs. THREE! A total on hoof weight of 1200 lbs and my husband and I did it all by ourselves. This video was invaluable! During this pandemic, living in the Midwest I was able to get an entire hog for pennies on the dollar on a hog that wasn't able to make it to the processing plant. Your video allowed me to learn and see how to do the processing at home. I can't thank you enough for sharing your knowledge.

@@Quagigitymire I raised my own pigs this year and used these Bearded Butcher videos as a guide. Overall it turned out well. I had some butcher experience with chickens. Overall I'd rate the difficulty as medium. I do think anyone with some decent knife skills could manage it.

When I was a kid, we used to live in a farm with alot of live stock around for selling, for breeding and for meat, so we would always watch with wow faces, when our dad chopped up an animal.. Huge amount of skill and knowledge goes into this work
Now I always buy meat from local farmers, who grow their own meat, they deserve that support so much more than those huge ass companies

I have been using the same dollar tree knives for like 7 years for regular cooking. This video makes me want to invest in some actual sharp knives.

I've learned so much watching these. I have Crohn's and can only digest mostly meats without becoming ill. And it's been so helpful to learn what each of the cuts are so that I can then go look up recipes of how to use all the different cuts so I'm not so afraid of trying a cut because I wasn't sure what it was or how to use it. It opens up new menu items for me, and so I'm not eating the same thing all the time. Thank you!

My only complaint is that you guys aren't "just down the road". I identify so much with where your videos come from. I learned to cut meat when I worked for a small town IGA store, back in the day. Never did I realize how many times in my life I would fall back on the skills I learned cutting meat and making sausage. I have my private meat palace here on our small hobby farm, kinda gone wild. Complete with band saw, 5hp hobart grinder, ez pak stuffer, slicer, walk-in cooler and freezer. The difference is I'm now at an age where I control when and what I make. Love making all types of sausage even more than the "butchering" part of it. Have watched many of your videos and what I can really attest to is the fact that you take professional steps and reduce them down to lay person terms. It's also a testament that without ever meeting or talking to any of you, I feel like your my neighbor and we could just as well be having a cup of coffee talking about what's up for today. Nice job. It's nice to watch a butcher with a lot of practice. And every butcher have a little different style. I struggle every winter to cut three pigs for home use, because in the meantime I almost forget everything.

Great series of videos, but this one is my favorite. We watched and re-watched the entire video countless times. We paused and studied the shoulder and ham cuts. In the end, we have a freezer full of boneless pork chops, roasts, and sausage trimmings. But the ham and fresh sides in brine are my prize cuts.

we do it so much different where i work at, it all depends what the costumer wants, we debone the ham and shoulder for rolls or roasts and we leave the steaks with bone for grilling, all italian recipes require 50/50 pork/beef so we sell so much mince pork and no sausage at all

2 hogs butchered, had the video going during the process. I do have a bandsaw, so I had quick pro cuts and am pleased with the outcome. The hogs hoof weight were 317# and 275#. Ready to move the pen and hit the stock sale again. They gave me great garden dirt.

I’ve watched a few videos of folks breaking down a hog but being professionals, you guys are smooth and efficient. Whatever gets squared off and trimmed up goes into sausage or ground pork. Wish I lived nearby so I could buy some of your products.

We just butchered our 2 pigs today, we used this video the entire way through, thank you so much for making this video. We were a little confused on the front shoulder, and all the ways it needs broke down. The bone saw i bought is not near as good as that one you are using, where can i get that bone saw?
It took us 5 hours to go from live pig to ready for packaging, that was 2 entire pigs, we did skin them, the second pig went way faster, and i smell really bad, i should probably go throw these clothes away and shower now. lol
Derrick, my daddy bought his saws at a True Value / Ace Hardware store but they have them at the Lowes hardware stores too. The Amish people have shops set up at the farmers market that can sharpen them too and they don't charge a lot for it.
Fascinating to see the carcass transform into all those cuts of meat. My gramma told me stories of how her daddy used to kill the pigs on their farm years ago. She had lots of stories of food prep back in those days. Many people have no idea what goes into it and most would starve of grocery stores closed

Should you age pork as you do beef? I've butchered a few hogs and never have aged them, just wanted to get your thoughts on that.
No, we do not age pork. We cut pigs the next day after slaughter.

Everybody wants to eat. But few get to appreciate the artful talent and love for craft it takes to get it there. My trade has not a damn thing to do with this and yet I sat here for an hour mesmerized; that was after watching the grass fed vs grain fed video. Truly gentlemen, from the rest of America, thank you for sharing your talent. I’ll be hunting a local butcher to do business with soon.
In NZ a favourite cut of pork is the back bone or pork bone as we call it - its a cut of meat from the neck to the tail of the pig - its cut into sections and slow cooked with potatoes pumpkins sweet potato watercress and dumplings - it takes about 4 to 5 hrs to cook - its more or less just a big stew or as we maori's call it a " Boil Up " - you cant go wrong bc its really filling 👍

Here's a tip Gentlemen. I like to place my butcher's twine in a sixth pan. It helps to keep it from skipping around the table and is more sanitary for the next use. Love your channel.

Would love to see this on a wild boar. We like to make the most out of our wild game but with boar the cuts are so different. I would love a professional butchers take on how to make the most out of it, other than sausages, roasts and hams.
I bet they would suggest skinning and gutting the hog and hanging it in a meat freezer for a week or so then following the same process

A whole lot of beef and pork has been butchered in a barn over the years and there is absolutely nothing wrong with doing it there

Growing up we butchered our own pigs. I certainly learned from this video when it comes to parting it all out nice and properly. I didn't know about the fat that's good for baking and clear. Generally we made lard from all fat and made cracklings. All other bone parts where cured and smoked and yes used to make beans and flavor stuffed cabbage rolls. Head became head cheese.
My favorite is smoked ham hocks cooked for 5 hrs till they fall apart.
