Hey mate another good video, I hate to be the guy commenting n UA-cam videos seeming like I’m whinging but when it comes to cerviche I run with the theory that anymore than 5 mins and the acidity burns the dish and changes the texture. Give it a try I think you’ll find the texture is smoother.

I'm going to have a crack at that, I've always been told that the timing has to do with the volume of fish and in warmer climates vs colder climates the timing has to do with firmness of flesh and things like the initial temp of the flesh going into the soln. Not everyone has Ice and that was the way people preserved fish I read into it FWIW.
Anothrr awesome video and so good for a sunday arvo arvo after working hard all day. You know whats crazy, in the past few years i have speared so few grey mackerel in southern qld and so many spanish mackerel. Basically as soon as they started the closures the spanish just got thicker and thicker. Wonder if they displace the greys? Use to be my bread and butter inshore. Maybe there is really large long term cycles im unaware of.
Thanks Rhys! I’ve seen more Spanish than ever over the last few years. I don’t know if my diving style/locations has changed that much either to be honest. Maybe they are just hanging around longer? I talked to the guys at the local tackle shop a couple months back and they were shocked that there was still big Greys locally. I’m seeing greys in numbers, along with 1 or two Spanish of nearly any size on just about every trip out. Purely anecdotal though…maybe they move slightly depending on temps, weather etc and we have them hanging around here locally in larger numbers for this time of year where somewhere else is missing them?
