I Love me some zucchini bread! I just made me some zucchini bread and muffins. Sometimes I put nuts. Sometimes raisins. Sometimes cranberries. Sometimes chocolate chips. I add applesauce to my mix. It makes the bread very moist. Thank you for sharing your recipe. I will be fixing it like yours real soon. Btw coconut is good also in it. Theres sooo very different variations of ways to make it. A friend just gave me a huge zucchini out of there garden so I will be freezing it. It freezes really good. Be blessed Mommy, Deddy and Sasha.

Just FYI..leave out the liquid mixed essence if you have a nut allergy as it usually contains almond essence. I always substitute 1/2 the amount of oil in cake recipes with unsweetened applesauce to make it a little healthier. Does not change the flavour and keeps the moisture. Simmering the raisins in 1/4 of rum will also hydrate them and infuse the rum flavour
