      @@Kryptix Providing great food and a healthy, diverse diet is a big part of being a parent. Kenji clearly values the scientific method and busting myths in favor of progress, which in my opinion is a rare-and great-quality. He also favors equality since he and his wife chose together to replace both of their last names with a hyphenated version. In this video he is wearing the bracelet his child made for him (even though it looks like a bracelet a child made), very likely to show her that he values her and values the act of kindness in giving a gift. All of these things tell me he is trying to be a great parent, and if provided with evidence on how to parent better I think he'd make a positive change.
      Plus, we don't know what 'random's dad is like. He could be a terrible dad (sorry if he isn't!).

    To everyone hating: this is better than anything you learn from a chef in a studio. To everyone not hating: this is cooking at home with enjoyment, no producer, no assistants and the fun and the joy we have at home. I like what Kenji is sharing with us and what it´s all about. He brings us what EVERY channel on youtube lacks: just cooking at home, enjoying ourselves, looking forward to the food we serve and the food you enjoy just moments after finishing. Kenji brings us the realest, the most direct content and we love it, because that´s what we do in times like these. We feed our families, we feed ourselves and we do it, because we like it and we enjoy doing it. He does it for the amateurs, for the semi pro cooks, for the industry and for the mothers, who cooked our first food. And it´s even better, if Kenji teaches us some things along the way. Give it up for Kenji, you´re the best man.

    as a chemical engineer, i did an auditory version of a double take on hearing you talk about azeotropes! fun fact, the azeotrope is why everclear is 95%, and not higher. (this is also why you should never never drink 99% alcohol - the trace benzene in there will mess you up.)

    Kenji, I think those japanese chives are the same as the garlic chives (allium tuberosum) often used in chinese food (called jiucai in mandarin/gau choy in cantonese - sometimes they are sun-deprived and yellow for certain stir fries). They are also the same plant as those chive flowers you've used in a few other videos.

      Lilly It is in most places that speak English I think, I’m from the UK and if someone was to say “Those guys other there” I wouldn’t associate them specificity with male, if just think of them as a group of people

You can’t get more inclusive. “Guys and gals” is actually less inclusive, hence the the Kenji rhyme “guys, gals, and non-binary pals.” Nobody hears “guys” and thinks “oh I guess Kenji is just referring to the male viewers at this moment.”

      I don't think it's really about whether people in the house are sick. It's pretty common to find E. coli and salmonella in sinks that aren't cleaned. I assume professional chefs are pretty good at cleaning a sink though.

      Cryssie G I’ve never commented but I’m always impressed with his confidence in how clean his sink is. I’d never do that in my sink, it’s a nuclear wasteland. Also it seems to me that if you forget to clean it after putting something that has raw chicken in it then you’re kind of screwing yourself when you reuse something.

      @@ToxicHorsePucky I get the feeling he just doesn't actually care as much. I remember him recording a video years back with Alton Brown, where Alton trolled him for sticking his raw meat contaminated fingers back into the salt container without washing his hands. If anything, I think there are some bad restaurant habits coming into play here. But also, it probably doesn't actually matter that much in the grand scheme of things. I personally do not trust my sink or my counter usually.

    Me, suddenly realizing that, in a bizarre coincidence, Kenji is making gyudon today and is cheating, too: “Hah! Suck it, nerds!”

      I mean, it is a homey dish at its core, so using hondashi is perfectly authentic.

    One of my fave dishes to eat and make, SO easy and rediculously delicious, I barely breath when I eat it. I follow the Tabi Eats recipe though as I am super sensitive to even the tiniest bit of fishyness, so no dashi for me haha :p

    The le creuset bi material revolution tools can also be found at le creuset stores (full price and outlet), as well as lecreuset.com. they're also really nice because the nylon in the handle is reinforced with tiny bits of glass, so it's extremely durable. (I worked there back when I was a 18 year old college student)
