- In this episode of Sandwich City, we’re following Brendan Tran of Little Kirin in the East Village. His pho sandwich is a standout, combining two Vietnamese staples, pho and banh mi, and becoming a shop best-seller after its opening in August 2022.
But success didn’t happen overnight: Brendan spent a whole summer experimenting with bread types until he found the perfect one. And the broth and brisket? They're also cooked with care and attention. Watch Brendan share how the sandwich is made - and his journey along the way.

About NYT Cooking:
All the food that’s fit to eat (yes, it’s an official New York Times production).
Much respect to him for what he sacrificed to be there for his family. Wishing him nothing by success, health, and prosperity going forward. Great, great episode.
This looks amazing.
Not saying anything new but want to reiterate....that food is the great connector of cultures. Food can give us our first tentative peek at something/someone new and then pulls us in to a full interaction with and appreciation of another culture.
It's an important idea that we, as a country, seem to need to learn over and over again.
NYT Cooking videos consistently provides this connection.
Thank you.
Food, to every culture, is an expression, a representation, an identity. We've all heard the saying, 'honest food'. This is it. Honesty is being confident with who you are while being true to the aforementioned characteristics. What would you prefer, a Viet-American's pho sandwich because he grew up with both concepts or a Viet-American's duck l'orange because he learnt it at cooking college? A little bit of skill and a ton of honesty will always be a tastier meal.
its like a french dip sandwich but with a different flavor profile and texture jesus I need this in my life.
Seen this place in the neighborhood earlier in the year, thought it was weird it wasn't on a traditional baguette but finally decided to give it a try. All I gotta say is I get it. Pho sandwich was crazy good, don't knock it till you try it!
Going to NYC next weekend. I’m knocking it until I try it 😂
His mom is speaking Chinese (Canto). I think their family might be Chinese Vietnamese.
He might actually be a Chan back in China.
yes surpise to hear canto....
Hi, back again asking for proper CCs on this. auto generated captions always have errors and omissions and are insufficient access for those who need them. most videos on this channel have them now, so why the inconsistency?
Agree.
Not sure why they even bother with auto-generated. I find that it's mostly gibberish. Makes no sense. Is not accurate.
As a professional video editor for a large company (and someone who makes youtube videos on my own channel) it literally is so easy to ensure proper subtitles. There is an auto-transcription feature in Premiere, which does it for you in a matter of seconds, and after PROOFREADING (which some seem to think is a tall order) then you can easily export as a side file to upload to UA-cam to use instead of their crappy ones. I am a one-person operation and I do this to ensure functional subtitles on my much-less viewed videos than NYT Cooking has.
i wonder who would be the right person to contact/email cause maybe the people responsible for the captions aren’t looking through comments. i do agree accurate captions would make the videos accessible for much more people, which is probably what they want right?
Wait! You guys can’t understand English?
@@BETTALIFE101 do you realize that some people have hearing disabilities?also it's not that big of an ask it's a 9 minute video.
These different cultures bringing their families and traditions and foods are what make america great!
wow really want to try that. and i also i love that his mom speaks Cantonese.
Yeah I was so surprised it wasn't Vietnamese
@@chinesefoodbong i feel like there’s a lot of canto and viet families. my parents know how to speak both, and i grew up with both cultures
What a special man Brendan is. I hope his business will continue to grow and thrive. All the best to him and his family.
The PERFECT video for the day after Thanksgiving!!
Brotha, inspiring people like you make me know there is still hope for this upcoming generation. Wishing you the best from CT.
Always inspiring in how the American dream can utilize a Vietnamese comfort food and turn it into another comfort food playing on the classic French dip and yet the rest of that menu looks OUTSTANDING! The Hangover cure sandwich looks like something I would want at 3 a.m. long after the bars close....
What a beautiful story and family!
Not only does the sandwich look delish... The soundtrack is 🔥🔥🔥
Wow what a good guy, taking care of his family
Salt of the earth right here! God bless you Brendan!!!!!!
Oh, his mom is Canto! Next fusion idea: xiao pho bao. Like a mini bowl of pho in every dumpling!
I was shocked too ... I was expecting Vietnamese
This is such a wholesome story. ❤
am i the only one notice his mom speaking cantonese? btw the sandwich looks fantastic, cant wait to try it!
I miss living in the East Village! Will need to visit soon and grab something from Little Kirin.
I need this in my life. Id call it the Pho dip.
Phorench dip
love little kirin. its one of those gem places that has legit good food and good people.
Never trust a skinny chef, never doubt a fluffy chef!
It’s actually the opposite. Fats get fat by standing in front an open door fridge at midnight stuffing cold hot dogs in their mouths. They actually know less about food because to fats a hot pocket is the equivalent of a gourmet meal. Think about it logically. MOST of the world’s Michelin stars ranked/world renowned chefs are actually skinny/ not fatties.
Not a rice noodle guy either but love pho broth. This seems like a match made in heaven.
Thank you #Eater for this video. You have proven again that the secret to success is doing one of two things really well that are supported by hard work. I am sure Brendan's father is proud of his work ethic and sense of responsibility to make something of all he was given.
What an incredible brother and son.
They need to bring this to Houston, Texas! 😊
The pho fix has been had this. 3.5/5
IT'S SO GOOOOOOD!! And the LOADED TOTS!! 🤤🤤🤤🤤🤤🤤🤤🤩
If you are reading this Brendan, one word from a stranger, PROUD!
That onion shirt is fire!
respect to Brendan!
Love this guy! He is adorable! Wish I could be in Manhattan for a day!
Looks amazing!!!
Dude his mom is speaking straight up Canto Chinese. All good. If food is good, than is good.
It really is so fucking good. I stayed a week in NY near this place & went at least three times lol
This is something I need in my life
I love pho and i like bahn mi. I also like french dip sandwiches. This is all my likes in one. Would try
Chef B is the best ❤
This looks fire. And while it is elevated, the og is Sunny & Annie’s!
I look forward to trying this! ❤
Looks good
Sunnie and Annie’s deli (two blocks away) has been making pho sandwiches since at least 2015 for ~$11
Longer.
Scrolling, saw this and YES!
3 days on a ship without food and water and getting looted 7 times is wild
Vice news vibes 😂
Well done 👍
I can dig it!
$21.99 for Pho Sandwich and dipping broth😱😱😱
Yeah, no thanks.
Sunny and Annie’s was the original
Erasure.
‘My loyalty card is my face card’ - STEALINGGGGG
look delicious but $18 for a sandwich.. gotta be worth it
So like Au jus, birria taco dip, and chicago beef sanwich whre you dip them.
this looks delicious! In DC we have a place called PhoWheels that does something very similar and it’s amazing
❤ pho sandwich 🥪
Nothing new about this, I respect the hard work and bringing this to NYC. However, if we’re talking about innovation, Viet restaurants on the west coast and Hawaii (Pig & the Lady) have been making pho French dips for over a decade now.
Looks bomb but i wonder how it would taste if you used the sprouts you get with pho and used fried shallots instead of fried onions. Also definitely need a squirt of Sriracha on that.
Un-Pho-Gettable Sandwich?
(I’ll see myself out.)
I got mad second hand embarrassment reading that
This is a real man
Looks delish! Where the bean sprouts and sambal?!? 😁
Where is the shirt from!! Drop the link
What an awesome dude.
Disappointed they didn't call it an "Un-Pho-rgettable Sandwich"
I've been doing this for like 10 yaars with bahn mi
He got it right with finding an alternative bread as the first thing for it to work, because otherwise it's gonna be soggy as hell with the French baguette. I would classify it as beef sandwich with Phở broth rather than calling it Phở Sandwich. Nevertheless, it looks damn good.
People saying pho incorrectly is making me tight
Bring this to San Diego. Would smash this
im moving back to bk tomorw!
Next up: Beef Wellington noodles.
There's a place in Denver, Chuey FU's that does a pho burrito. This doesn't strike me as breaking as much ground as it's acting.
It’s not breaking grounds cuz dipping bread in soup has been a thing in Vietnam for as long as noodle is a thing over there
don't think it's trying to be a new idea, just the best possible version of it. and as someone who tried this, it's got a good shot
$20 for that sandwich? no thanks. You have to pay extra for the broth too. no thanks. I'd pay $20 NY prices for a big ass bowl of pho with the same beef and fixings but not the sandwich.
I wouldn't pay either
Yooo this dude’s mom speaking Chinese lmao.
Roger Molls is a pleasant surprise.
Banh mi with stock
Surprised he didn't call it the Pho Mi.
its as good as a pizza burger or burger pizza
Crispy onions are fried in beef tallow is my guess.
Bring this to LA
Very good genetics beautiful family.
Why not just do banh mi bo kho? Same deal, and kind of a beef dip if you think about it.
Should add cheese 🧀 😋
It’s an option. As a Vietnamese, not on this sandwich.
Please, this is not new. Phodega in Chicago has been doing the Viet Dip before Sandwich City opened.
I was surprised to hear his mom speaking in Cantonese instead of Vietnamese. Is the family Chinese-Vietnamese. What's the story behind it?
I knew two guys who were from Hong Kong with Vietnamese last names. I think during or before the war, many fled to Hong Kong. I think they were the "boat people"? I'm not sure.
I'd rather eat Pho not in Manhattan since it's cheaper. City prices are expensive cause of the rent.
502w in downtown Colorado springs has been doing a similar bahnmi for years. giving waaayyy too much credit to this guy
The mom speaking canto Chinese lol
His dad viet
There is a lot of chinese living in vietnam when a lot of chinese-vietnamese fled from vietnam during the brief china-vietnam war back in 1979
@@vincentnnyc his mom is 100% vietnamese, judging by her name. I bet she learn it when she was in hong kong or something.
@@mrcalipride if you mean she was born in Vietnam. Then yes. But she is ethnically Chinese. I know because I have the same last name and I was born in Vietnam but my parents taught me to speak Cantonese at home. Both my parents can speak Vietnamese, Cantonese and mandarin and we were one of those “boat ppl.”
They embraced the food but not the language. Mom is Vietnamese and dad is Chinese.
❤
Id soak them onions in datu puti so imma just assume thats the secret move
My favorite part of pho is the broth tho, so not sure how I feel about it in sandwich form
Charging 6x more than what the ingredients cost is criminal
❤❤ Amen 🤘🤘
missed opportunity to name the video "UnPHOgettable
Its UnPhogettable lol
The pho sandwich is not a new concept at all. I live in Seattle and there have bee pho-French dips for years over here. No hate jus sayin
Vinegar onions… every Asian knows that hack😂 thank me later
Isn't it more of a bun cha sandwich
Unphogettable
If you pronounce pho like flo in 2024 especially in New York . Deportation please.
The mum is not Vietnamese. This Chinese dude wants to capitalise on Vietnamese cuisine. For nearly USD $20 plus tips, I would prefer the real deal...
You don’t know what pho is? You a phool.
So, you just want better beef sandwiches?
Joe Biden's sandwich shop, all of the people who eat here voted for the Dems.
