The problem you mention with Sony colours in some lighting conditions is the same I have with my old RX100 mark I. Is it still there with newer Sony cameras?
I'm considering getting one. Found one new with 16-50 and 55-210 lenses for 759€. I'd be buying the camera more for the lenses. What I really want is the A6400. What do you think? Fair price?
If you only want the lenses - you might probably get them cheaper individually - but you'd have to keep an eye out. For the camera and lenses it's not a bad price. Just know the 16-50 is not a great lens.

There isn't a great range of options for 18mm. there's the new Sony 10-18mm and there's also a Smayang 18mm - which is an FE lens, but should work fine on APSC e-mount - and it's relatively inexpensive at €399 - but I haven't tried this unfortunately. If you don't mind going slightly wider, the Sigma 16mm is supposed to be excellent

It’s much improved in newer Sony cameras. On my zv1 for example the colours are great
