    Besides Bun Bo Hue, Com Hen is another popular rice dish from the region of Hue. There are many toppings to this rice, and you can use many varieties, including star fruit, green apple, fried pork rinks, banana blossoms, and green taro stem. The goal is to balance savory, sweetness, tartness, spiciness with contrasting textures of crunchiness, softness, and crispiness. It's a bowl of flavors that meshed perfectly together.

    3 bags (2 1/2 lb clams)
    1/3 cup of oil
    1 tbsp annatto seeds
    1 bunch of rau ram (can substitue basil or mint)
    1/2 minced onion
    1 bulb of minced garlic
    5 slices of ginger julienne
    1 minced red chili pepper
    2 tbsp of fish sauce
    1 tsp of sugar
    2 tsp of chicken powder
    dash of black pepper
    3 green onions chopped
    Sauce
    ------
    1 tbsp of minced lemongrass
    1 tbsp oil
    2 cloves of garlic minced
    2 tbsp of chopped pineapple
    1 tbsp of shrimp paste
    1 and 1/2 cups of clam juice
    2 tsp of sugar
    half lemon juice
    dash of red pepper flakes
    Toppings
    -----------
    1 cup of peanuts
    2 black sesame rice crackers
    1 cup bean sprouts
    1 bunch for herbs
    1/2 cucumber shredded
    lettuce greens (or iceberg lettuce)
    Sriracha hot chili
    green apple or green mango shredded (optional)
    banana blossom (optional)
