Vedesh, it's true what you said about North Americans not washing the chicken before cooking it. I heard Rachel Rae say that on her show, that it spreads bacteria. The thing is cleaning up properly afterwards. When I make any type of soup, I always fry up the meat the same way you did with the chicken. It seals in the juices and add extra flavor.
