I'm Kapangpangan, and we typically put the garlic and onions to saute first. Then add you giniling babi, or small-diced pork belly (my pref). You saute the meat for several minutes until it's soft, then you season with Patis (no salt). Then you add your corn, which is cut off the cobb and grated. You grate the cob after you cut off the corn kernals, to add the juice and make the soup sweeter. You can use the back of your knife to grate the cob as long as you capture the juice and tidbits. Then you add your water and bring to a strong simmer. Then add shrimp at the end so that they don't shrink and then your bitter melon leaves last. You don't need to add sugar or any chicken bullion if you cook this way. We also add high qaulity chicharon or lechon kawali driectly in the soup at the end. This truly makes it authentic suam.
