The simple recipe for massaman curry is based on packet sauce, fish sauce and tamarind paste - plus our usual ingredients. How objective the rating is is debatable, but a curry like massaman is definitely one of the world's tastiest curries. It is on the menu of the Thai royal court on a regular basis. It's also one of the most common dishes in Thai cafes and restaurants - along with Tom Yam and Tom Kha. It's not difficult to make, especially with ready-made massaman curry paste - it's readily available from numerous oriental online retailers.
    Full ingredient list:
    Beef or chicken flesh - 1kg;
    coconut milk or coconut cream - 400 g;
    potatoes - 10 pieces (small);
    onions (small onions) - 40 pieces (or 4 medium onions);
    Massaman curry paste - 100 g;
    tamarind paste - 2 tbsp (or to taste);
    fish sauce - 4 tbsp (or to taste);
    palm sugar - 2 tbsp (or to taste);
    roasted peanuts or cashews - 4 tbsp (optional);
    bay leaf - 4 tbsp (optional);
    white cardamom - 1 tbsp (optional);
    zira - 2 tbsp (optional).
