It's lovely to know all the Bengali words for spices. You should do a video on that. I also appreciate your lovely video on Shahi Gorom Moshla, wow! Such a great one. I have American friends who are all making it now! PS - My comment would not be complete without my implacable resistance to your forced music. It is such a pity that you need to add loud music (or any music) to this sensory overload of visuals, sound, instructions, measurements, flavorings, and analysis we are trying to do on a recipe. A recipe is alchemy and we are chemists. Would you force music on chemistry students in a lab? This is as much out of place as that would be. Improve your channel by not adding music and you will move far ahead of the competition. No one appreciates having music thrust upon them, repetitive and mind-numbing.

Had to tweak the recipe a bit based on the availability of ingredients: mainly used mixed dal instead of moong and masoor, mutton pieces. Added some chopped dry fruits towards the end because my mum loves those. Also added a few strands of saffron in the milk. Quite happy with the results. Thanks, once again!

This is really tempting but I think you should once try the real haleem recipe. When I was staying in Kolkata, this is what haleem meant to me but when I moved out and had a taste of Hyderabadi haleem, the definition got completely changed for me. It's overall in a whole new level and though Kolkata being the best street food hub of the world, I don't know why they don't serve haleem in its original form. Hope one day bengalis will get the real taste of haleem too in the heart of Kolkata. Peace!

BTW the origins of haleem can be found in a tenth century cookbook from Baghdad. Similar dishes are found in various Islamic countries (Iran,Lebanon etc) .The South Asian version is the most complex and delicious.
