Take some mayonnaise and whisk in red wine vinegar until it takes on a pink color. Then add lots of dry tarragon with salt and pepper to your taste. Add a splash of water if you like a thinner bodied dressing. Enjoy!
I think I have some mexican tarragon. It's up in the corner of the property that I hardly see. Hot and dry with lots of weeds and it's pretty happy. Flowers after the hot summer heat. And spreads all by itself.

You also use less salt when cooking with it. Found that out by chance.
