I didn't gain any weight over the holidays, I didn't indulge this year as I normally do. I actually lost weight 😢. My appetite has not been very good to me, but this fish curry inspired me 😊. I am thinking of making either fish curry or shrimp curry😊. I appreciate the encouragement to get in the kitchen and get inspired. I wish I can order a gallon of that Coconut Water. I am such a fanatic for coconut water, I love that stuff😍. Been trying to find a wholesaler here, but can't find any 😔. That stuff is my coffee 😆. After a big night out I wake up go on liberty ave and buy me a coconut water to rehydrate myself and it always does the trick, they said there’s no evidence that it helps with hangovers but it’s so rich in electrolytes, and I feel wayy better after drinking it.

Hi Denny you I am from Trinidad to but really my mom never cook that fish for us to eat with food. Is the first time I see that where I am living now there is a lady from your country I learn about eating it with food she all so told how to do it I dont like eating it the same day beacuse I put sugar & salt lime leaving it for the next day or two I know evey one cook different but that is how I cook mines. When I hear the prices for food in Guyana and I compare it to the salaries I am just can't see how people can afford to pay their bills. Truly amazing.

And don’t forget I have all my relatives living in the USA and there 1 salary is not enough to pay the bills that’s y most Guyanese settle for basements to live just to make ends meet. Let’s do the math average one person earn $2,000 per month in NYC Rend a basement is $1,000 minimum Now $1,000 remaining for gas insurance phone bill electric and heat food clothing medical etc is it enough to afford you a good life. But if two work then you have $4,000 to do the same things which Is better.

I have visited many Guyanese in Canada and the US and in both countries, most of the folks I visited lived in good looking homes, and apartments. Only 1 person I know lived in a basement. This is not to say, many are not struggling to make ends meet. I lived in Guyana for decades and it is with great admiration I watch Guyanese making a living in Guyana. I admire what you do.

Since I'm guyanese I often use onions a lot in my cooking, is there a specific reason for you not using onions or is it just personal preference?
