I love your recipes, Paula. I think instead of graham crackers for this, I'd bake up some puff pastry "crackers" which would mimic eclair pastry better. Instant pudding tastes weird to me. If you made it from scratch, you would just have to wait for it to cool down before folding into the whipped cream. (I agree, real whipped cream is WAY better than "whipped topping"). A chocolate ganache frosting would not be any harder to make than yours and would send this dessert over the top.

I found my Independence Day dessert but I think I’ll put some strawberries and blueberries and pipe fresh whipped cream with a start tip just to give it the 4th of July feel

I’ve made this recipe for years and it’s a family favorite! For a lighter topping version, I use 8 oz. of cool whip mixed with some chocolate syrup. Spread on top. Then- drizzle some chocolate crackle sauce (the kind that hardens instantly on top of ice cream). Sooo light and tasty.

I’m gonna make this for Father’s Day for my husband. I don’t know if you have a video out yet but do you have you’re own recipe for homemade whip cream. I’d really love to learn how to make it and see what the difference is. I didn’t have anyone to show me how to cook or how to do anything and because of that I’m still teaching myself how to cook at 38 years old. I wanna teach myself everything about cooking and baking.
Mom used to make this but used butterscotch instead all the time for big get togethers and it waas a welcome gift by all. The only difference is that she would melt chocolate chips and pour over as a topping. Lovely and love you Paula.
I have made this exact same cake several times. I do use a thawed whipped topping and a can of milk chocolate frosting melted to a pouring consistency, Even using these shortcuts, I've always had rave reviews.

Absolutely love making this cake! Only, I use freshly made pastry cream versus pudding. And yes Paula -- totally agree fresh whipped cream is best!

Good lord Paula buy you a new hand mixer ! Than rickety thing clacks horribly! Even a $10 mixer from the dollar store works and sounds better. !

If you stir the milk and pudding mix together and just set it aside it will thicken by itself in under five minutes.
