Imma try this and substitute the buttermilk with fermented yogurt beverage.
When I was little I caught my grandmother eating the mutant biscuit while she cooked the rest of whatever meal it was for. She told me that the last biscuit was the cooks biscuit. Next meal she was making for all of us I helped her out. I must have been six or seven. I probably got in the way more than I helped. When she pulled the biscuits out of the oven, there were magically two mutants. That biscuit never tasted so good.
Now when I make biscuits (sweet potato or others) I always eat that biscuit when no one is looking and take a moment to think about her. She passed away when I was 17 (1985). My kids haven't wanted to learn to cook from me yet (still teens) but maybe I'll get to make a second mutant biscuit for one of my grandchildren.
Now to go get some buttermilk. I've got to make some biscuits this weekend.

That extra biscuit becomes what I call the sample, or the reason why I'm not hungry after cooking. I sample everything to see how it tastes, but ya know I gotta check 3-4 times. For every item. Yeah I ate my dinner an hour before everyone else, and it feels awesome.

I did it this afternoon before going to family's annual dinner at my aunt's house. It came out great. This recipe has very special meaning to me as it was a favorite of my great grandmother on my dad's side of the family. No one has perfected her style as I have done today. I am so very thankful for her spirit which is alive and thriving today. Ashe!!!

After coming to this channel for years, I have now gotten into the habit of thumbing up as soon as the page loads, even before watching the video. In my estimation at least 99 out of 100 of Chef John's recipes are just fantastic and the other one is still good. He's just never ever put out a dud recipe.

I'm making your sweet potato casserole with pistachio crust right now. It gets requested on both sides of our family now. No one liked the marshmallow ancestral version, but it was traditional until I brought your recipe many years ago. Now no one looks back and your version devoured every holiday. I attribute its success to nuts, sugar and maple syrup. Cheers!

Just made these today!! They came out amazing. I had bought sweet potato side dish from Central Market, and they had not been seasoned at all, so I just made these biscuits 😋. Slight mod, I added 1 1/5 tbsp of brown sugar,, and it was perfect amount of sweetness. I also made cinnamon butter to glaze them with after coming out the oven. Then we put the more on the inside, and a little apple jelly as we ate them. they were an amazing brunch show stopper! Must try!

I’m now on my second double batch, sixth overall. This last double is for a church coffee hour later this morning. My wife volunteered me. I ran low on left over sweet potatoes and made up the difference with apple sauce. The dough is about as odd as the rest of them ,wet spots and zones of dust. How that mess turns into food is pure magic. Thanks chef John, these biscuits go in my regular repertoire.

Just pulled my second batch out of the oven. Best tasting biscuits I've ever eaten by far. I found success making the mutant biscuit just as prestine as the rest by folding it over on itself. Thanks for the recipe Chef John, I'm sure these will be a hit at dinner.

The frozen butter/grater is a cool idea, I had never thought of that to cut the butter into the SRF.
These were alllll that. They were also fabulous as the pastry around a baked brie wheel. Excited to try them with plantain, pumpkin, whatever we can get in there ☺

I have made these twice now! But I bake the sweet potatoes naked and pricked right on the rack in a 475 degree oven until cooked through (45min-1hour). The second time, I was in a hurry and did not get my potatoes soft through the middle. The result was some delicious bites of sweet potato throughout my biscuits! Thanks so much for recipes, I look forward to trying out many more!

Made this for Thanksgiving and it turned out delicious and was much loved :) Really not very hard to make. My first time making biscuits from scratch and they still turned out great. Thank you for the great recipe! I watch your videos any time I want to relax, even if I don't plan on ever making some of the recipes (i.e. any meat recipes, as I don't eat meat). Somehow it makes me feel like the world is going to be ok :)

I prefer the sweet potatoes roasted and adding some cinnamon and clove. It just tastes sweeter and more dessert-y that way. So glad you covered this very important topic, Chef John!

I tried this today for Thanksgiving. I was a bit dubious at first - all the butter I grated seemed to disappear into the flour (added a bit extra) and it didn't fold together as quickly as it did in the video (so I folded it a couple extra times). Sent them off into the oven convinced that I'd ruined them. But in the end? They were amazing. They were so flakey and buttery I couldn't believe it! And they were absolutely beautiful! Even the couple people who don't like sweet potato and refused to try them (their loss) kept commenting on how festive they were. I will be making these again. Thanks, chef!

The best biscuits I have ever made. Seriously 100% perfect. Sreved them with the Caldo Verde Soup. The resulting combination was totally genius. Just made these and nailed them! I added a touch of cinnamon and nutmeg to the buttermilk mixture. Also, when I pulled them out of the oven I brushed a mixture of melted butter, brown sugar and a touch of cinnamon on top.
Very nice. I'm going to try that folding method/cutting on my regular biscuits. Usually not a big fan of square biscuits, but I did like how the folding keeps from over working the dough. I suppose I could use a biscuit cutter afterward, but cutting them looked so much easier.

Well dang, I'm not a fan of sweet potatoes, but biscuits are great and this looks like a good way of retrying sweet potatoes. And if I don't end up liking them, I can just bring them to work and be the best coworker who makes amazing biscuits. Either way it's a win-win for me, so I guess I gotta give these a go.

Aren't you a fan of sweet potatoes? Just try this: boil a whole medium size sweet potato (skin on) with a tsp sugar and a pinch of salt for about 15 minutes (do not overcook), drain the water and let it rest overnight. Cut the potato 1/2 inch size slices and pan fry them with a bit of oil until golden. Sprinkle a bit of salt on them and serve as a side dish with any type of stew .
