Brine Recipe:
3 quarts water
1 cup Kosher salt
1/2 cup brown sugar
Bad Beast Pork Rub recipe (recipe still in work):
1 1/2 cup brown sugar
1/4 cup kosher salt
2 tbsp basil
2 tbsp oregano
2 tbsp thyme
2 tbsp onion powder
1 tbsp lemon pepper
1 tbsp garlic powder
1/2 tbsp allspice
1/2 tbsp ground cinnamon
1 tsp cayenne pepper
Cook pork shoulder on rotisserie until internal temperature reaches 160 degrees.
